Every few weeks we will share FIT approved recipes. Our hope as we post more and more recipes is that you will see how easy it is to make any recipe FIT approved. Occasionally there will be recipes introduced where some of the ingredients are not “FIT approved”; in these cases we will give you options for substituting the ingredients for healthier options.

This week’s recipe is Crispy Chicken with Honey Mustard



Crispy Chicken with Honey Mustard

Boneless skinless chicken breasts (4)

Cut each into 4 strips (they are about 2 inches wide each)

First, dip into mixture of:

1/3 cup sour cream (1-2 carb)

2 Tbsp. heavy cream (2 carb)



** Substitute fat free half & half for the heavy cream to keep this recipes FIT Approved (I looked it up… it works :] )

2 Tbsp. Guldens spicy brown mustard (0 carb)

2 eggs (0 carb)

add some salt substitute (for potassium) and natures seasoning (salt free) sprinkle both to taste.

Add About 2 to 3 Tbsp. water to thin to pancake batter-like thickness

Then dip into:

Plain pork rinds ground in food processor

Some more salt substitute and seasoning as desired



Cook these in a glass baking dish that is sprayed with butter flavored NO carbohydrate cooking spray at 375 degrees for 45 mins.



No carb "Honey" mustard sauce..

1/2 cup fat-free mayonnaise

1 to 2 Tbsp. spicy brown mustard (to taste)



Your favorite sweetener to taste - yes it really sweetens it to make it taste like honey mustard! If you add to much sweetener, add more mustard to balance out the taste.



If you eat 2 Chicken Breast worth (8 slices) you are only consuming  about 290 calories plus the dipping sauce.



The dipping sauce has 80 calories per 1/2 cup.
