Low-Carb and Low-Calorie Breakfast: Egg in a Pepper

Yields 1 Serving

1 serving has 74 calories, .8 grams carbs, 5 grams fat, and 6.4 grams protein

Ingredients

  • 1 large egg
  • 1 (1/4-inch thick) ring bell pepper
  • Salt & ground black pepper, to taste

Directions

  1. Heat a non-stick skillet over medium heat.
  2. Place bell pepper ring in the hot skillet.
  3. Crack the egg into bell pepper ring; cook until bottom holds together and corners are browned (2 to 3 minutes).
  4. Flip and cook until the desired doneness is reached (2 to 3 minutes more).
  5. Season with salt and ground black pepper.
  6. Serve and enjoy!
