There is something so delicious about the taste of Mediterranean food. Perhaps it’s the freshness of the ingredients, or the blending of the herbs and spices that come together just right to make your mouth water over the sights and smells of the food on offer. Whichever it is, there is no denying that a choice dish influenced by the Mediterranean can enhance all the other plates around it.

This sunny cuisine can bring with it a touch of summer, even during the cold winter days. And the best part, it can easily be created in your kitchen.

With care, recipes inspired by the Mediterranean can be added to your repertoire of low cal, low fat dishes to help maintain your weight loss goals.

Lamb and mint feature heavily on a Mediterranean menu and when cooked to perfection, complement each other to make a melt in your mouth dish. Lamb can be made into burger-sized patties or rolled into meatballs and placed on skewers.

Lamb and Mint Burgers With a Greek Salad

Yields 4-5 Servings

1 serving has 250 calories, 19.5 g fat, & 24.5 g protein

If you have extra calories from working out, then feel free to add a small amount of feta cheese to your salad. This will account for an additional 50 calories, or alternatively, you can leave it out altogether. Remember that you can always reduce serving sizes to save on calories.

Ingredients

Lamb and Mint Burgers

  • 500 g lamb mince
  • 1/2 cup fresh mint, chopped
  • 2-3 tablespoons of fresh or dried rosemary
  • ​salt and pepper to taste

Greek Salad

  • black olives
  • feta cheese
  • red onion rings
  • cucumber, diced
  • ​tomatoes, diced

Directions

Lamb and Mint Burgers

  1. Place the lamb mince in a bowl and break it up with a spoon.
  2. Add the mint and rosemary and mix together with your hands to get the flavors worked through.
  3. Mold into burger shapes as firmly as you can. The harder you press the mince mixture into shape, the better it will stay together when cooking.
  4. Heat some olive oil in a frying pan on a moderate heat, and cook until browned then turn over and cook the other side. It usually takes about 5-8 minutes on each side.

Greek Salad

  1. Place all the salad ingredients together in a serving dish and gently mix. I haven't given quantities as everyone likes their Greek salad slightly differently.
  2. Drizzle with olive oil.
