Bacon-Tomato Frittatas: A Low-Carb and Low Calorie Breakfast Choice

 

Serves 4 

One serving yields 164 calories, 11.7 grams fat, 5.3 grams carbs, and 10.2 grams protein


Ingredients 

  • 4 ripe tomatoes 
  • 2 pieces of bacon, cooked and diced 
  • 4 eggs (Note: For an even healthier option, use egg whites or Egg Beaters to reduce the number of calories in the recipe without changing the protein content or the taste.)
  • 1 tablespoon ghee or clarified butter (Note: ghee sounds "exotic," but Walmart sells it, as do other retail outlets. If you search the Internet, you'll find posts that show easy ways to prepare homemade ghee, which is a better alternative.) 
  • Salt and pepper to taste

Directions 

  1. Preheat oven to 425º F. 
  2. Cut the tops of the tomatoes off.  
  3. Using a paring knife, spoon, or fork, completely scoop out the insides of each tomato. 
  4. Evenly divide the diced bacon between the four tomatoes.  
  5. Scramble the four eggs separately, then pour them one by one into each empty tomato, right on top of the diced bacon. 
  6. Divide the ghee evenly between the four uncooked eggs, topping each egg-filled tomato.
  7. Sprinkle salt and pepper over the tomatoes to taste. 
  8. Place the tomatoes in a Pyrex baking dish and bake for 40 or 50 minutes, until the eggs are cooked through. 
  9. Serve and enjoy while hot.
