Devilishly Delicious Deviled Eggs

Deviled eggs may bring visions of summertime and picnics…but who says you have to wait for warm weather to enjoy them? For example, are you thinking about hosting or attending a Halloween party? If so, then you might consider serving or bringing deviled eggs for a “ghoulishly good” treat! If you’re trying to lose weight, then this recipe for deviled eggs makes a great appetizer. They’re low in carbs and calories, but still taste delicious. As well, the protein provided by the eggs will fill you up and help you feel full for a long period of time. That way, you won’t be as tempted by all the “spooky” sweets which can sabotage your weight loss efforts.

No matter what season, you can enjoy these deviled eggs as a satisfying snack or appetizer. You’ll find this recipe is easy and requires minimal time for preparation.

Lightened Up Deviled Eggs 

Serves 6 

One serving (2 egg halves) yields 85.3 calories, 5.5 grams of fat, 1.8 grams of carbs, and 6.4 grams of protein


Ingredients 
  • 6 large hardboiled eggs 
  • 3 Tbsp. fat free mayonnaise 
  • 1 tsp Dijon mustard 
  • 1/4 tsp black pepper 
  • 1 tsp dill pickle, finely chopped 
  • 1 tsp pickle juice 
  • 1 Tbsp. celery, finely chopped 
  • 1 Tbsp. parsley, chopped

Directions 

  1. Cut each hardboiled egg in half, lengthwise, and remove the yolks. 
  2. Place the yolks in a large bowl.  
  3. Mash the yolks with a fork until they are small, uniform, and granular.  
  4. Add the remaining ingredients to the yolks, then stir to combine.  
  5. Using a scoop or piping bag, carefully add the yolk mixture back into each egg half. 
  6. Enjoy!

Extra tips:

> By mashing only four of the egg yolks, you’ll save 20 calories and 1 gram of fat without changing the taste. 

> If you would like to decorate your deviled eggs for a Halloween party, you can make them look like scary eyeballs! Top each deviled egg with a slice of black olive and a caper. Then use red food coloring to create “bloody” streaks. Gross! But fun!
