This recipe for zucchini hash browns offers a healthy and tasty alternative to the starchy and carb-filled kind made from potatoes.

These zucchini hash browns will taste great as either a breakfast or lunch entrée. The recipe combines eggs, along with zucchini, to offer up a nice balance between carbs and protein. Also, because they are low-carb and low calorie, they fit the bill for most diet plans.

Zucchini is a great vegetable to include in your diet for weight loss because it bears many health benefits. For example, it contains a good amount of fiber, which helps lower cholesterol. Zucchini also contains vitamins C and A, along with folate, which are powerful antioxidants. 

Zucchini Hash Browns 

Yields 2 Servings 

1 serving contains 143 calories, 11.3 grams fat, 4.4 grams carbs, and 6.7 grams protein 

 

Ingredients 

  • 2 medium eggs 
  • 1 tsp garlic powder 
  • 1 tsp onion powder 
  • 1 dash pepper 
  • 1 dash salt 
  • 1 tbsp olive oil 
  • 1 cup shredded zucchini 

Directions 

  1. Heat oil in skillet. 
  2. Mix together zucchini, slightly beaten eggs, salt, pepper, garlic powder and onion powder. Drop by spoonfuls into the hot skillet. 
  3. After browning on one side flip and brown the other side. 

Notes

Substitute egg whites to lower calorie, cholesterol, and fat counts.

Cook lightly to brown, but do not fry.

Add extra flavor by topping these off with fat-free sour cream. Check the label though and make sure you choose sour cream with no sugar added.
