When it comes to red meat, you'll want to select the leanest choices and trim away all visible fat before you cook it. Eating smaller portions of meat helps you get the right amount of protein while you're on a weight loss plan.

Low-Carb Low Calorie Beef Tenderloin

Yields: 8 Servings

One serving yields 89.4 calories, 3.5 grams fat, .5 grams carbs, and 13.2 grams protein

Ingredients

  • 1 lb. raw very lean beef tenderloin
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 medium garlic cloves, minced
  • 1 tbsp. rosemary, fresh, minced
  • 1 tsp. dried oregano

Directions

  1. Preheat oven to 400*F.
  2. Coat a shallow roasting pan with cooking spray.
  3. Season beef all over with salt & pepper.
  4. Transfer beef to the prepared pan.
  5. Combine garlic, rosemary, and oregano in a small bowl.
  6. Rub the herb mixture all over the top of the beef; gently press herbs into the beef with your hands so the spices stick.
  7. Roast until an instant-read thermometer inserted in center of beef reads 160*F, about 40-50 minutes (for medium meat; cook longer for medium to well done meat).

 

Make this a complete meal by adding a side of cooked broccoli or asparagus. Enjoy!
