Low Carb Raspberry and Kiwi Sorbet

If you are trying to lose weight, you’ll want to steer clear of the leftover Valentine’s candy. We understand how tough it is to resist that temptation, though. Fortunately, you do have other sweet dessert options which are healthier than candy and taste just as delicious. Even better, you can enjoy them guilt-free, even when you’re losing weight. This recipe for raspberry and kiwi sorbet makes an excellent low carb and low calorie dessert choice.

Low Carb Raspberry and Kiwi Sorbet

Yields 8 Servings

1 serving (1/2 cup each) has 43 calories, 5 grams carbs, 0 grams fat and 3 grams protein 

Ingredients

For the Kiwi Sorbet:

  • 1-1/2 cups kiwi fruit, chopped
  • 1 cup water
  • 2 Tbsp. Great Lakes Gelatin
  • ¼ cup of your favorite artificial sweetener (Splenda, Stevia etc.) 

For the Raspberry Sorbet:

  • 1-1/2 cups raspberries
  • 1 cup water
  • 2 Tbsp. Great Lakes Gelatin
  • ¼ cup of your favorite artificial sweetener (Splenda, Stevia etc.) 

Directions

For the Kiwi Sorbet:

  1. Puree the kiwi, water, sweetener, and gelatin in a magic bullet or blender.
  2. Pour into a 1 quart freezer bag and freeze for four hours; massage the bag every hour to keep the ingredients from separating.

For the Raspberry Sorbet:

  1. Puree the raspberries, water, sweetener, and gelatin in a magic bullet or blender.
  2. Pour through a strainer into a 1 quart freezer bag and freeze for four hours; massage the bag every hour to keep the ingredients from separating. 
  1. Next, once the two sorbets are thickened and partially firm, layer or swirl them together in a plastic container.
  2. Freeze for 6 - 8 hours until completely firm.
  3. To serve, you may need to remove the container of sorbet from the freezer.
  4. Let the container of sorbet sit out for 10 minutes on the counter, so you can scoop it easily.
  5. Enjoy!
