This particular recipe includes some of the vegetables which are currently in season for autumn. When possible, you should consider buying these seasonal vegetables locally, at farmers markets, and/or from the organic section of the grocery store. Healthy and Delicious Marinated Veggies
Serves 8
One serving yields 90 calories, 5 grams of fat, 7 grams of carbs, and 3 grams of protein
Ingredients
- 1/2 cup thickly sliced zucchini
- 1/2 cup sliced red bell pepper
- 1/2 cup sliced yellow bell pepper
- 1/2 cup sliced yellow squash
- 1/2 cup sliced red onion
- 16 large fresh button mushrooms
- 16 cherry tomatoes
- 3 Tbsp olive oil
- 1/4 cup soy sauce
- 1/4 cup lemon juice
- 1/2 clove garlic, crushed
Preparation
- Place the zucchini, red bell pepper, yellow bell pepper, squash, red onion, mushrooms, and tomatoes into a large bowl.
- Mix the olive oil, soy sauce, lemon juice, and garlic together into a small bowl.
- Pour the liquid mixture over the vegetables.
- Cover bowl, then marinate in the refrigerator for 30 minutes.
- Preheat grill for medium heat, and lightly oil the grate.
- Remove vegetables from marinade, and place on preheated grill.
- Cook for 12 to 15 minutes, or until tender.
- Enjoy!
