Low-Carb Smoked Salmon Salad in Avocado Boats

Yields 4 Servings

1 serving (1/2 an avocado w/ salad filling) has 135 calories, 7 g carbs, 10 g fat, & 7 g protein


Ingredients

  • 3 tablespoons fat-free mayonnaise
  • 1 1/2 teaspoons lemon juice (plus a bit more for spritzing)
  • 2-3 grinds fresh black pepper
  • 1/2 pound smoked salmon, chopped
  • 3 tablespoons of finely chopped green onions
  • Salt, to taste
  • 2 ripe avocados, halved, pitted, and scooped out of the peel

Directions

  1. Whisk mayonnaise, lemon juice, and pepper together in a medium bowl.
  2. Add smoked salmon and green onions, tossing to combine.
  3. Taste to see if you need to add another grind of pepper.
  4. When the smoked salmon salad is adjusted to your liking, chill it for a few hours if you're able to, to let the flavors meld.
  5. Lightly salt the four avocado halves and spritz them with a bit of lemon juice.
  6. Stuff each avocado half with a quarter of the mixture, really piling it up.
  7. Serve immediately and enjoy!
