Delicious Oven-Baked Salmon With Herbs
for Two
Serves 2
One serving yields 253 calories, 9 grams of fat, 7 grams of carbs, and 36 grams of protein
Prep Time: 5 minutes
Cook Time: 45 minutes
Total Time: 50 minutes
Ingredients

1 salmon filet - about a pound. (Note: Whenever possible - and if you can afford it - we recommend buying wild-caught salmon, which is your healthiest option)
- 2 - 4 Tablespoon chopped, fresh herbs. (Thyme, dill, or parsley taste best)
- 1/2 teaspoon pepper
- 1/2 teaspoon salt (a bit more if using kosher salt, or if the fish is skinned)
- 1 teaspoon olive oil, if that - you just need a very thin film
Preparation

Heat the oven to 200° F. It's best to bake fish at lower temperatures.
- Chop up the herb, then mix it with the salt and pepper. If you want to use more of the herb, salt and/or pepper, that's fine.
- Spread the olive oil in a thin, even layer along the bottom of an oven-proof serving platter, then put the fish on top. If the filet is skinned, put some salt and pepper on both sides, otherwise just put the fish skin-side down and season the top only. To make the seasoning stick better, spread some of the oil from the platter onto the fish, either by hand or spatula, if you prefer.
- Place the platter in the oven and bake the salmon for about 40 to 45 minutes. You'll know it's done when it flakes.
You won't believe how good it is! Feel free to enhance the salmon's flavor with fresh lemon juice, or even a little hot sauce if you prefer. Serve the fish with a side salad made with fresh, uncooked vegetables. For dessert, you can indulge with a serving of decadent, fresh red berries for a perfect, sweet ending to your delicious, romantic Valentine's Dinner!
