Tender, Fall-Off-the-Bone Whole Chicken in the Slow Cooker
Serves 4
One serving yields 327 calories, 23.4 grams of fat, 2.2 grams of carbs & 25.5 grams of protein
Ingredients
- Olive oil
- 2 teaspoons salt
- 2 teaspoons paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon onion powder
- 1 teaspoon thyme
- 1 teaspoon white pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 large roasting chicken (with a pop-up timer if possible)
- 1 cup chopped onion (optional)
Directions

Note: To save calories in this recipe, cook the chicken without skin and save approximately 100 calories per serving. Rub the chicken with olive oil and the spices to substitute for the skin. Or cook as directed and remove the skin before eating.
- Combine the spices in a small bowl.
- Remove any giblets from chicken and clean chicken.
- Rub spice mixture onto the chicken.
- Place the chicken into a resealable plastic bag and refrigerate overnight. (Note: it's okay to skip this step if you're in a hurry).
- When you're ready to start cooking, put chopped onion in bottom of crock pot.
- Add the chicken to the slow cooker. No liquid is needed, the chicken will make its own juices.
- Cook on low for 4-8 hours.
- Note: A pop-up timer in the chicken is ideal so you can know when your chicken is ready without having to cut into it during the cooking process.
- When it's done, serve your chicken warm with a side of mashed cauliflower or your favorite roasted veggies. Enjoy!
