5 Cool and Totally Healthy Popsicle Recipes

Summer may almost be at an end but it doesn’t stop us from craving a popsicle every now and again. While store-bought popsicles often contain sugar and unnecessary processed ingredients, home-made popsicles are more suited to a healthy diet and weight loss program. When you make the popsicles at home, you have more control over the ingredients which go into the recipes.

With ingredients such as spinach, parsley, cucumber, peaches and berries, here are 5 recipes we are certain you will love.

Green Smoothie Popsicles

Yields 8 Popsicles

Green smoothie popsicles are a great way to enjoy your vegetables.

Ingredients

  • 1 cup milk (or dairy free alternative)
  • 1 cup fresh spinach
  • ¼ cup parsley
  • 1 banana
  • 2 kiwis
  • 2 tablespoons sugar-free syrup or other liquid sweetener
  • 1 tablespoon grated fresh ginger

Directions

  1. Blend milk, spinach and parsley until smooth. Add in the banana, 1 kiwi, syrup and ginger. Blend until smooth and taste, adding more syrup if necessary.
  2. Peel and slice the remaining kiwi, placing a slice or two into each mold.
  3. Pour in the green smoothie to fill in the mold, then freeze until hard (at least six hours).
  4. Remove popsicles from the freezer and run the mold under warm water for a few seconds to loosen them up.

Cucumber Raspberry Pops

Yields 4 Popsicles

This fresh cucumber raspberry popsicle recipe will have you craving for more summer.

Ingredients

  • 1 large cucumber
  • 1 medium lemon
  • 16 fresh raspberries
  • 1-2 tablespoons of sugar-free syrup or other liquid sweetener (if necessary)

Directions

  1. In a juicer, add the cucumber and lemon.
  2. Stir the cucumber and lemon juice together, and add syrup or liquid sweetener for taste.
  3. Pour in enough juice in your popsicle mold to come up about one-fourth of the way.
  4. Freeze for 20 minutes. Stir. Freeze for 20 minutes. Stir.
  5. Add raspberries and then another layer of juice. Repeat the process. Freeze solid for about 3 hours.

Vanilla Peach Pops

Yields 10 Popsicles

Peaches and summer go together perfectly.

Ingredients

  • 1¾ cups almond milk
  • 2 teaspoons melted coconut oil
  • 1 tablespoon sugar-free syrup or liquid sweetener
  • 1 tiny pinch salt
  • 4-5 ripe peaches, chopped

Directions

  1. Bring almond milk to room temperature and whisk together with coconut oil, syrup and salt. Stir the cucumber and lemon juice together, and add syrup or liquid sweetener for taste.
  2. Slice peaches and drop them into the mold.
  3. Pour the almond milk mix over the peaches. Place sticks and then freeze overnight.

Chai Popsicles

Yields 10 Popsicles

A popsicle with a difference.

Ingredients

  • 1 tablespoon chai spiced mix (½ teaspoon cardamom, ½ teaspoon all spice, 1 teaspoon cinnamon, ½ teaspoon ground cloves, 1½ teaspoons ground ginger)
  • 2 cups almond milk
  • 1 tablespoon sugar-free syrup or liquid sweetener
  • 1 teaspoon vanilla extract

Directions

  1. Bring almond milk, syrup or sweetener, vanilla and chai mix into your blender and blend until smooth.
  2. Taste and adjust syrup and chai mix as required.
  3. Pour into a popsicle mold and add sticks.
  4. Freeze for up to 5 hours or overnight.

Fiesta Ice Pops

Yields 4 Popsicles

Fresh and zesty, these will become a firm favorite.

Ingredients

  • ¼ cup fresh squeezed lemon/lime juice
  • 2 inches of fresh ginger, peeled and grated
  • Zest of 1 lime
  • ½ cup of syrup-ginger mix (Makes 2 cups: 2 cups water, 1 cup of sugar-free syrup or liquid sweetener, 6 inches of chopped ginger)

 

Directions

  1. Prepare syrup. Combine water and syrup in saucepan and heat until dissolved. Add the sliced ginger and simmer for 20 minutes. Remove from heat and allow to cool. Strain and let cool to room temperature.
  2. Combine ½ cup of syrup-ginger mix with the rest of the ingredients in a bowl and stir.
  3. Pour into popsicle molds and freeze for one hour.
  4. Insert wood sticks and freeze completely.
