However, here are some tips which will allow you to add even more on your plate to meet your recommended daily serving without sacrificing flavor or texture.

Add them to your soup

Soup is a great all-round dish which can act as a starter or even be served up as the main course. Regardless of what kind of soup you are serving up, there is always an extra vegetable or two that can be added to give it that bit more flavor or burst of color. Whether you are blending the soup or serving it up as is straight from the pot, extras like spinach, pumpkin, mushrooms, onion or carrots can be added with ease.

Replace carbs with vegies

Replacing carbs with vegies is a scrumptious idea. Spirulized zucchini noodles (or zoodles) is a wonderful replacement for standard pasta or noodles, and spaghetti squash has been wowing diners for quite a long time now. But it doesn’t have to end there. You can spirulize carrots, kohlrabi, red cabbage and broccoli stalks. So many fun and colorful options.

Pop them in your casserole

Casseroles are delicious – especially in the colder months, and the great thing is you can add whatever you want in them, and they still taste fantastic. Eggplant, pumpkin and zucchini all enhance a hearty casserole nicely and only serve to strengthen it even more. It is more filling, healthier and ultimately tastier.

Mix them in your chili

Chili is a favorite dish, and the great news is that you can make it any way you like and it is still tantalizing to those taste buds. Consider adding carrots, kale, mushrooms and cauliflower or whatever else you have in the fridge. It is a great way to use up leftover vegetables. And each time you eat it, depending on what you add, will offer a slightly different taste for you to enjoy.

Upgrade your tomato sauce

Many recipes call for a tomato-based sauce, and it is a fun opportunity to add an extra vegetable or two. You can puree any vegetable and add it to the mix. Consider pumpkin, carrots, onions or peppers to give it an extra burst of flavor. And for those who try to stay away from vegetables, you won’t even notice that they have been added.
