Bacon Wrapped Scallops
Ingredients
- 16 sea scallops
- 8 slices bacon cut in half crosswise
- 16 toothpicks
- olive oil
- freshly ground black pepper to taste
- kosher salt to taste
Instructions:

Preheat oven to 425 degrees

Line a baking sheet with parchment paper. Set aside.

Pat scallops dry and wrap one scallop in a half slice of bacon and secure with toothpick. Repeat with remaining scallops.

Drizzle olive oil over each scallop and season with pepper and kosher salt.

Arrange scallops in a single layer on prepared baking sheet. Leave room between each scallop.

Bake 12 to 15 minutes. Serve hot.
Healthy Veggie Stuffing
Ingredients:
- 4 cups chopped cauliflower
- 1 cup butternut squash
- 1 cup chopped yellow onion
- 10 oz chopped mushrooms
- 4 minced garlic cloves
- 1 tablespoon of butter
- 1 package chicken soup mix
- 1/2 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 cup walnuts
- salt and pepper, to taste
Instructions:
- Preheat oven to 400 degrees
- Arrange chopped cauliflower, squash, and onion on one or two baking sheet
- Roast for 30 minutes, stirring once halfway through
- While the veggies are roasting, saute garlic and mushrooms in butter for 8-10 minutes, until tender
- Add roasted vegetables and garlic and mushroom mix to a food processor.
- Add chicken soup mix, thyme, and sage.
- Process lightly, leaving a chunky texture.
- Add nuts, salt and pepper. Serve warm.
Beef Tenderloin
Ingredients:
- 1 beef tenderloin
- 2 tablespoons olive oil
- 4 minced garlic cloves
- salt and pepper, to taste
Instructions
- Preheat the oven to 425 degrees
- Rub the roast with the oil, garlic, salt, and pepper
- Cook roast until a meat thermometer reads 145 degrees. This should take about 55 minutes.
- Remove from the oven and let stand for 45 minutes. Serve.
Hot Cocoa
Ingredients
- 2 cup almond milk, unsweetened
- 1/2 cup heavy cream
- 5 tbsp cocoa powder
- 4 tbsp artificial sweetener
- 1/2 tsp vanilla extract
- pinch salt
Instructions
- Mix together the cocoa powder, sweetener, and salt..
- Heat the milk and heavy cream over medium-low heat. Stir in in the cocoa powder mixture.
- Heat the hot chocolate until steaming. Remove from heat, and add the vanilla extract.
