The Herbed Fresh Asparagus Recipe below combines asparagus with several flavorful herbs and other ingredients for a tasty side dish. Herbed Fresh Asparagus Recipe 

Makes 4 Servings 

1 serving yields 66 calories, 5 grams fat, 4 grams carbs, and 2 grams protein


Ingredients 

  • 1 pound fresh asparagus, trimmed 
  • 2 garlic cloves, minced 
  • 1/2 teaspoon dried basil 
  • 1/4 teaspoon dried rosemary, crushed 
  • 1/4 teaspoon dried thyme 
  • 1/8 teaspoon salt 
  • 1/8 teaspoon pepper 
  • 2 teaspoons olive oil 
  • 1/4 cup roasted sweet red peppers, drained and chopped 
  • 2 tablespoons chopped walnuts

Directions 

  1. In a large skillet, bring 1/2 inch of water to a boil.  
  2. Add asparagus; cover and boil for 3-5 minutes or until crisp-tender.  
  3. Drain and keep warm. 
  4. In the same skillet, sauté the garlic and herbs/seasonings in olive oil until tender.  
  5. Add the asparagus, red peppers and walnuts. 
  6. Cook until heated through completely.
