On the downside, however, most (if not all) fast food is made from processed ingredients and is often fried and/or greasy. As well, it’s quite difficult - if not impossible - to find anything “clean” to eat in a fast food restaurant since even salads sometimes include preservatives.

When you’re dieting to lose weight, or simply want to eat better, one way to help avoid the temptation is by bringing your own healthy lunches to work with you. Fortunately, there are plenty of tasty, nutritious lunch recipes which are also filling and satisfying, such as this one for Egg White Salad Lettuce Cups. Low-Carb Egg White Salad Lettuce Cups

Yields 4 Servings

1 serving has 200 calories, 7 grams carbs, 0 grams fat, and 12 grams protein

 

Ingredients

  • 4 eggs, large, hard boiled
  • 6 eggs, large, hard boiled, use whites only
  • 2 stalks celery, diced
  • 1/4 onion, medium, diced
  • 1/2 cup fat-free mayonnaise
  • 1 tablespoon Dijon mustard
  • Pepper, black, ground
  • 2 green onions, chopped
  • 1 head lettuce, butter or large green leafy

Directions

  1. To hard boil the eggs, place eggs in a saucepan, pour in just enough water to cover the eggs and bring to a rolling boil.
  2. As soon as the water boils, remove the pan from burner, cover tightly and let sit in water for 17 minutes (20 minutes for X-large eggs and 15 minutes for medium eggs).
  3. Drain and cool with ice water.
  4. Peel and chop the eggs, discarding 6 of the yolks for another use.
  5. In a medium bowl, mix the eggs, celery, onions, pepper, fat-free mayonnaise, and Dijon.
  6. Arrange lettuce leaves on plates and spoon the egg salad on top.
  7. Top with chopped green onions and cracked black pepper.
  8. Serve and enjoy!
