A New Recipe to Try: Turkish Maklube

Being on a diet doesn't mean you don't get to try new things or new cuisines. Knowing how to make the right substitutions can make it possible for you to cook almost many cuisine and still keep yourself on track to lose weight. This recipe is a good example.  We take a traditional Turkish/Arabic dish and replace the potatoes with butternut squash and replace standard white rice with cauliflower rice. Make no mistake - this is a healthy, filling meal!

Maklube

Yields 6 Servings

Nutritional Information: 258 Calories, 10 g carbs, 17 g fat,  16 g protein

This Turkish/Arabic dish is unlike anything you've put on your dinner table. It brings together all of the different food groups into one fully-featured meal!

Ingredients:

  • 400 gr. beef cut into bite-size pieces
  • 1 cup cooked peas
  • 1/2 cup cooked carrots cut into cubes
  • 1/2 cup cooked butternut squash cut into cubes
  • 1 onion
  • 1/4 cup vegetable oil
  • 2 cups cauliflower rice
  • Salt
  • 5 cups hot water

Preparation:

  1. Place the meat in a pressure cooker and cook over medium heat (no oil) until it turns light brown and absorbs all of the water it initially releases.
  2. Add 1/4 cup vegetable into the cooker and wait until the oil is heated.
  3. Now, add the onion and cook until softened.
  4. Add enough hot water to submerge the meat and onion in water, put the lid on and cook according to the instructions of your pressure cooker.
  5. Open the lid and continue cooking until most of the water is absorbed.
  6. Partially cook the cauliflower rice in a separate sauce pan.
  7. Add the salt, stir, then remove from heat.
  8. Place the meat, peas, carrots and butternut squash into the pot you are going to make maklube in, and stir everything together.
  9. Now add the cauliflower rice on top of the meat mixture and flatten without stirring.
  10. Add a 1/2 cup of hot water slowly from the sides.
  11. Cook over very low heat (lid tipped open just a bit) until all the water is steamed off.
  12. Let it rest for 15-20 mins, invert over a serving platter and serve.

Due to the changes that we made - your recipe may not stick together after inversion like the tradition dish is meant to.  Even if it all falls apart, it's still sure to be a delicious dish!
