A Simple Snack Recipe: Cucumbers and Shallots in Vinegar

If you’re looking for a cool and tasty veggie snack to enjoy during these last few weeks of summer, then this recipe certainly fits the bill. It’s very simple and takes hardly any time to prepare. Even better? It’s very healthy and filling. The recipe includes cucumbers, which are great vegetables to include in your diet when you’re losing weight.

For one thing, cucumbers are very low in calories. They also contain a high water content, which helps you feel fuller and helps keep you from overeating. In other words, you can regularly snack on cucumbers, or include them in recipes, as you work towards your weight loss goal. Some added benefits cucumbers offer include improved complexion and healthier skin.

Cucumbers are a free food on the FIT program. This means that even though this snack contains 35 calories per serving, you won't have to count them. You can feel good about indulging in this tasty, guilt-free snack while working towards your weight loss goals.

 

Simple Snacking: Cucumbers and Shallots in Vinegar 

Serves 4 

One serving yields 35 calories, 0 grams fat, 5 grams carbs and 1 gram protein 

Ingredients 

  • 2 cucumbers, English, peeled and sliced (Note: The English cucumber is thinner and less bitter than the more common “slicer cucumber” you may usually buy. The English cucumber is sometimes labeled as “seedless” or “burpless” in stores.) 
  • 3 shallots, thinly sliced (or you can use onions instead) 
  • 2/3 cup vinegar 
  • 1/4 teaspoon salt 
  • 1/4 teaspoon black pepper 

Preparation 

  1. Place sliced cucumbers and shallots in a shallow container.  
  2. Add vinegar, salt, and pepper, then toss.  
  3. Marinate for up to 3 days in the refrigerator. 
  4. Enjoy!
