Chicken Pot Pie Soup Recipe

There are few meals more comforting than a chicken pot pie. Here's a great way to enjoy all of the flavors and warm memories it brings, without all the carbs that come with a crusty pie! Chicken pot pie soup is savory enough for any meal of the day and is sure to warm you up on the coldest of nights.

Ingredients 

  • Olive oil
  • Boneless skinless chicken breasts
  • Onion
  • Carrots
  • Garlic
  • Butter
  • Flour
  • Chicken stock
  • Fresh thyme
  • Frozen peas
  • Fresh parsley
  • Heavy cream
  • Toasted bread

Recipe

  1. Heat the olive oil in a large pot over medium heat. 
  2. Add the chicken and cook it until it’s no longer pink on the outside. 
  3. Add the onion and cook it until it starts to soften. Add the carrots, and garlic and stir it all together.
  4. Add the butter to the pan, stirring until it’s melted. Sprinkle with flour and stir. 
  5. Add the chicken stock, turn the heat to high and bring the soup to a boil. 
  6. Lower the heat and keep the soup at a constant simmer for twenty minutes. 
  7. Add the frozen peas, chopped parsley and continue simmering for another ten minutes. 
  8. Finish by adding the heavy cream and stir to combine.
