When following a low-carb diet for weight loss, you will find there are some carbs you can eat without worry – but then there are other carbs you should avoid at all costs. Rice, and especially white rice, is one of those carbs which falls into that “avoid” category. Rice is a food which is part of a group of carbs called “complex starchy carbohydrates.”
Along with most of the other carbs that are part of this group, rice is refined and made up of complex chains of sugar. And just like sugar, these starchy carbs are definitely big “no-no’s” when you’re trying to lose weight. On the other hand, you can enjoy other carbs, such as the type found in most veggies, guilt-free. The carbs found in certain veggies are known as “complex fibrous carbohydrates.” If you like cauliflower, which falls into this group of "good" carbs, then you are in for a treat. The recipe below may use the word “rice,” but it is actually cauliflower. This means it fits nicely into most low-carb diet plans.

Cilantro-Lime Cauliflower Rice
Yields 6 servings
1 serving has 60.3 calories, 4.4 grams of carbs, 4.8 grams of fat, and 1 gram of protein
Ingredients
- 1 small or 1/2 of a large head of cauliflower
- 2 Tbsp. Extra Light Olive Oil
- 1/2 yellow or white onion, diced
- 2 cloves garlic, minced
- Sea salt & ground pepper, to taste
- 1/2 cup cilantro, chopped
- Zest of one large lime
Tips
* You can add other seasonings to mix with other entrees. This makes a great substitute for rice in any recipe. However, if the cauliflower combo is being used in casseroles where the rice is specifically used for help with absorbing liquid, then you will need to adjust the amount of liquid used in the recipe.
* To 'rice' the raw cauliflower, chop it coarsely and fill your blender about 1/2 with the cauliflower. Fill it up with water and pulse it until the cauliflower resembles rice. Dump it into a fine-mesh strainer.
* Cauliflower can be processed ahead of time and stored in the refrigerator for a couple of days.
Directions
- In two separate batches, pulse the cauliflower florets in a food processor until the pieces are about the size of rice grains.
- Heat a large skillet and add the olive oil, garlic, red onion, salt, and pepper.
- Sauté for a few minutes, until the onion is soft and translucent.
- Add the “riced” cauliflower to the skillet, coating it evenly in oil and onions & garlic.
- Add the lime zest and sauté for 5 or 6 minutes, until the cauliflower begins to soften (don’t overcook, otherwise it will become "mushy").
- Add the cilantro and mix well.
- Squeeze the lime juice over the top and serve.
- Enjoy this "rice" as a side dish with your favorite lean meat or vegetarian entrée!
