Don't Forget The Stuffing

Stuffing is part and parcel of the holiday season. It's hardly a celebration without the Thanksgiving or Christmas stuffing in some form or another. But it doesn't have to be full of fat or carbs to make it any less enjoyable. Here are some delicious alternatives to the traditional stuffing that can be served up during the holiday season.

Recipe 1: Low-Carb Pecan Stuffing

The whole family will be fighting over this delicious pecan stuffing which features thyme, celery salt, sage, poultry seasoning and parsley.

Yields 6 servings

1 serving has 308 calories, 8 g carbs, 31 g fat, & 4 g protein

Ingredients:

  • 2 Tablespoons butter, ghee or coconut oil
  • 1 yellow onion, chopped
  • 3 ribs celery, chopped
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rubbed sage
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon celery salt
  • 8 oz pecans, whole or pieces
  • 2 Tablespoons fresh sage, leaves stacked and sliced thinly
  • salt and pepper to taste
  • 1 Tablespoon parsley

Directions:

  1. Heat a large skillet over medium-high heat. Add butter.
  2. When butter has melted and has stopped bubbling, add yellow onion and celery.
  3. Cook onion and celery, stirring occasionally until the edges of onion begin to brown and onion is becoming translucent. Onions and celery should both be soft. Reduce heat to medium.
  4. Stir in thyme, rubbed sage, poultry seasoning, and celery salt. Stir to combine.
  5. Add pecans and fresh sage. Stir and cook for about three minutes to soften the flavors of the sage and allow pecans to absorb the flavor of the herbs.
  6. Add salt and pepper to taste.
  7. Stir in parsley.

Recipe Two: Cauliflower Stuffing

Try this once ,and you will not be tempted at all to go back to your traditional stuffing recipe.

Yields 10 servings

1 serving has 95 calories, 7 g carbs, 7 g fat, & 2 g protein

Ingredients:

  • 1 large head cauliflower, cut into small florets
  • 1 large onion, sliced
  • 1/4 cup celery, chopped thinly
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground sage
  • 2 Tablespoons fresh sage, leaves stacked and sliced thinly
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup pecans, chopped

Directions:

  1. Preheat the oven to 450 degrees F (232 degrees C). Line a baking sheet with parchment paper or line with foil and grease well.
  2. In a large bowl, stir together the chopped cauliflower, onions, celery, and garlic. Toss with olive oil, poultry seasoning, sage, thyme, sea salt, and black pepper.
  3. Spread the mixture in a single layer on the lined baking sheet. (You may need two sheets depending on the size. You want as many of the cauliflower florets and onions in contact with the plan as possible.) Roast in the oven for about 15 minutes, until the onions are soft and cauliflower is starting to brown a little.
  4. Add the fresh parsley and pecans to the pan, and stir everything together. Roast for 10-15 more minutes, until the pecans are lightly toasted, cauliflower is well-browned, and onions are starting to caramelize.
