Grilled Lemon Herb Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Zest and juice of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
- 1 teaspoon dried oregano (or 1 tablespoon fresh oregano leaves)
- Salt and pepper to taste
Avocado Salsa:
- 2 ripe avocados, diced
- 1 small red onion, finely chopped
- 1 small jalapeno, seeded and minced (optional, for spice)
- 1 tomato, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
-
Marinate the Chicken: In a bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, dried thyme, dried oregano, salt, and pepper. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, coating each piece evenly. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
-
Prepare the Avocado Salsa: In a separate bowl, combine diced avocados, chopped red onion, minced jalapeno (if using), diced tomato, chopped cilantro, lime juice, salt, and pepper. Gently toss to mix all ingredients together. Taste and adjust seasoning as needed. Cover and refrigerate until ready to serve.
-
Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken breasts from the marinade and discard the remaining marinade. Grill the chicken for 6-7 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (75°C). Cooking time may vary depending on the thickness of the chicken breasts. Grill until grill marks appear and the chicken is no longer pink in the center.
-
Serve: Remove the grilled chicken from the grill and let it rest for a few minutes before serving. Spoon a generous amount of avocado salsa over each chicken breast. Garnish with additional cilantro leaves and serve immediately, accompanied by your favorite side dishes such as rice, quinoa, or grilled vegetables.
