It is hard to say no to a refreshing mint mojito, especially on a warm summer’s eve. This classic recipe requires only 4 ingredients. Just add to ice and serve with a smile.
Non-Boozy Mint Mojito
Yields 4 Servings
Ingredients
- 2 liter club soda
- 2 teaspoons sweetener of choice
- 1 small bunch of mint
- 2 fresh limes, sliced lengthways
- ice
Directions
- Fill glass halfway with ice.
- Fill glass with club soda.
- Add sweetener and stir.
- Add 3-4 fresh limes, lightly squeezing and stir.
- Add 8-10 mint leaves and stir.
- Garnish with lime wedge and mint leaf, if desired.

While you might not think of peaches and tomatoes as a delicious pairing, this mocktail should help you change your mind. It can even be made ahead of time. Just serve when ready. Be mindful that tomatoes are very sweet so it is best to reduce the portion sizes to save on carbs.
Tomato Peach Spritzer
Yields 6 Servings
Ingredients
- 1 ½ pounds yellow or red tomatoes, cored and cut into wedges (4 to 5 tomatoes)
- 2 peaches, peeled, pitted and cut into wedges
- 1 ½ teaspoon grated fresh ginger
- 2 cups sugar-free ginger ale
Directions
- Puree tomatoes, peaches, and ginger until smooth.
- Strain juice into a pitcher and discard any solids.
- Pour into glasses with ice.
- Top each serving with 1/3 cup cup sugar-free ginger ale.
