Keto Bacon and Brussels Sprouts Casserole

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 6 slices of bacon, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to preheat while you prepare the ingredients.

  2. Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until it becomes crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.

  3. Sauté the Brussels Sprouts: Add the halved Brussels sprouts to the skillet with the bacon grease. Sauté for 5-7 minutes, stirring occasionally, until the Brussels sprouts are tender and slightly browned. Add the minced garlic and cook for an additional 1-2 minutes until fragrant. Season with salt and black pepper to taste.

  4. Prepare the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the shredded cheddar cheese and half of the Parmesan cheese until melted and well-combined. Sprinkle in the paprika and stir to incorporate.

  5. Combine and Assemble: Add the cooked bacon back into the skillet and mix well to combine all ingredients. Transfer the Brussels sprouts and bacon mixture into a greased baking dish.

  6. Top and Bake: Sprinkle the remaining Parmesan cheese evenly over the top of the casserole. Place the dish in the preheated oven and bake for 15-20 minutes, or until the top is golden brown and bubbling.

  7. Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired and serve warm.
