Ingredients
- 2 lbs beef chuck roast, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup celery, chopped
- 1 cup mushrooms, sliced
- 1 cup turnips, peeled and cubed (keto-friendly potato substitute)
- 1 cup carrots, peeled and sliced (optional, adjust for carb count)
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper, to taste
- Fresh parsley, chopped for garnish (optional)
- Xanthan gum or unflavored gelatin, for thickening (optional)
Instructions
-
Sear the Beef: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Season the beef cubes with salt and black pepper, then sear them in the hot oil until browned on all sides. Work in batches if necessary. Remove the beef and set it aside.
-
Sauté the Vegetables: In the same pot, add the remaining tablespoon of olive oil. Sauté the chopped onion for 3-4 minutes until translucent. Add the garlic and cook for an additional 1 minute until fragrant.
-
Combine Ingredients: Return the beef to the pot. Stir in the tomato paste and Worcestershire sauce, ensuring the beef is coated. Add the beef broth, celery, mushrooms, turnips, carrots (if using), thyme, and rosemary.
-
Simmer: Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally to prevent sticking.
-
Thicken the Stew: If you prefer a thicker stew, sprinkle a small amount of xanthan gum or add unflavored gelatin, stirring until the stew thickens slightly. Be cautious, as a little goes a long way.
-
Season and Serve: Taste and adjust the seasoning with more salt and black pepper if needed. Ladle the stew into bowls and garnish with fresh parsley before serving.
Tips for the Best Keto Beef Stew
- Choose the Right Cut of Beef: Chuck roast is ideal for stew due to its marbling and ability to become tender with slow cooking.
- Substitute Vegetables: To keep carbs low, use vegetables like turnips, celery, and mushrooms instead of potatoes. Adjust the amount of carrots or skip them to fit your macro goals.
- Meal Prep Option: This stew tastes even better the next day, making it an excellent meal prep option. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
