It combines the protein from eggs and the vitamins and minerals from vegetables into one healthy breakfast. Even better? This recipe is low in calories and low in carbs, so you can enjoy it guilt-free.

Onions add flavor and kick to this recipe. Did you know that eating onions might possibly play a role in your weight loss efforts? Onions contain an antioxidant known as quercetin, which may help you lose weight by increasing your body’s energy expenditure and calorie burning. Breakfast Scramble Delight 

Serves 4 

One serving yields 118 calories, 6 grams fat, 4 grams carbs, and 11 grams protein 

Ingredients 

  • 1 teaspoon olive oil 
  • ½ cup diced red onion 
  • 1 ripe tomato - cored, seeded and diced (about 1 cup) 
  • 4 large eggs 
  • 4 large egg whites (or substitute with Egg Beaters, if you prefer) 
  • 2 tablespoons water (optional) 
  • 1 tablespoon finely chopped fresh dill or 1 teaspoon dried dill 
  • Salt and ground pepper, to taste 

Preparation 

  1. Heat oil over medium heat in a medium-sized, nonstick skillet.
  2. Add the onion and cook for 2 minutes, stirring once or twice. 
  3. Add the tomato and cook for 1 minute more. 
  4. Transfer the onion-tomato mixture to a small bowl and set aside. 
  5. In a medium bowl, lightly beat together the whole eggs, egg whites, and water (if using). 
  6. Pour the egg mixture into the skillet and cook over medium-low heat, stirring frequently, until the eggs are almost set. 
  7. Drain excess water from the onion-tomato mixture, then stir the mixture gently into the skillet with the eggs. 
  8. Toss in the dill, season with salt and pepper, and serve. 
  9. Enjoy!
