Low-Carb and Low Calorie Snack: Pepper Poppers with Guacamole

When planning for food at your outdoor events, you may be at a loss as to what snacks you can serve - and eat - while losing weight. You'll be glad to learn there are plenty of delicious snacks which fit into your own diet plans while satisfying your guests, such as this recipe for Pepper Poppers. Better still? No one ever has to know this snack is low in carbs and calories because it tastes great!

Although many people mistakenly think guacamole is unhealthy, this is really not the case. The main ingredient in guacamole is avocados, which provide significant amounts of fiber, potassium, and multiple vitamins. The fat content that people talk about in avocados is mainly monounsaturated fat. This is considered to be a "good fat," since it reduces the levels of bad cholesterol in your blood, and subsequently lowers your risk of stroke and heart disease.

Avocados are also an excellent source of protein, which promotes weight loss by helping you feel fuller between meals.

Pepper Poppers with Guacamole

Yields 12 Servings (2 pieces = 1 serving)

1 serving has approximately 79 calories, 5 grams carbs, 5 grams fat, and 3 grams protein

 

Ingredients:

  • 1 lb sweet baby peppers 
  • 2 ripe Haas avocados 
  • 1 lime, juiced 
  • 1/2 handful cilantro, chopped 
  • 1 tsp chili garlic sauce or similar hot sauce of your choice
  • salt, to taste 
  • 8 oz bacon bits

Directions:

  1. Preheat oven to 350°F. 
  2. Prepare the peppers by cutting off their stems, then cutting them in half, lengthwise. 
  3. Pull out the white membrane and seeds from each pepper.
  4. Place the peppers on a baking sheet and bake until tender, about 10 minutes. (Note: If you prefer, you could skip the baking step completely and leave the peppers raw.)
  5. While waiting for the peppers to bake (if you choose), prepare the guacamole by mashing the avocados first, then mixing in the lime juice, cilantro, hot sauce and a good pinch of salt.
  6. Use a small spoon to fill each pepper with the guacamole. 
  7. Top with bacon bits before serving.
  8. Enjoy!
