Low-Carb Dinner: Shrimp Florentine with Zoodles

Giving up your favorite pasta when going on a low-carb diet or similar weight loss plan isn’t always easy. For one thing, pasta is really simple and quick to prepare as part of a weeknight dinner, especially when you’re short on time. One of the major downsides to pasta, however, include its high calorie and carbohydrate counts. This is especially the case with pasta made with refined white flour, which is what many of us tend to eat.

The good news is there are healthy and delicious alternatives to pasta, such as “Zoodles.” Zoodles, which is another name for pasta made of zucchini, have been growing in popularity. There are many surprisingly delicious recipes made with Zoodles, such as the one below that you can enjoy guilt-free while you’re losing weight.

Low-Carb Shrimp Florentine with Zoodles

Yields 4 Servings

1 serving has 229 calories, 7.1 grams carbs, 13.4 grams fat, and 21 grams protein

Ingredients

  • 1 Tbsp. Butter
  • 1 Tbsp. extra-virgin olive oil
  • 2 zucchini, cut into noodle-shape strands (Cut zucchini into noodle shapes using a spiralizing device)
  • 1/2 large yellow onion, minced
  • 1 Tbsp. chopped garlic
  • 1/2 tsp kosher salt
  • 2 Tbsp. butter
  • 1 pound large shrimp, peeled and deveined
  • 1 tsp minced garlic
  • 1 (6 oz.) bag of baby spinach
  • 1 Tbsp. fresh lemon juice
  • 1 tsp red pepper flakes
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper

Directions

  1. Heat 1 tablespoon butter and olive oil together in a large skillet over medium heat.
  2. Cook and stir zucchini noodles (Zoodles), onion, chopped garlic, and 1/2 teaspoon salt until Zoodles are tender and onion is translucent, about 5 minutes.
  3. Transfer the Zoodle mixture to a bowl.
  4. Heat 2 tablespoons butter in the same skillet.
  5. Cook and stir shrimp and minced garlic until shrimp are just pink (about 3 to 4 minutes).
  6. Add spinach, lemon juice, red pepper flakes, 1/2 teaspoon salt, and pepper.
  7. Cook and stir until spinach begins to wilt, about 3 to 4 minutes.
  8. Add Zoodle mixture to the skillet with the shrimp and spinach.
  9. Cook and stir until heated through, about 2 to 3 more minutes.
  10. Serve and enjoy!
