Chorizo Spiced Pulled Pork
Yields 6 Servings

Ingredients
- 1 tbsp. paprika
- 1 tsp. – 1 tbsp. ancho chili powder
- 1 tsp. salt
- 1 tsp. ground cumin
- 1 tsp. oregano
- 1/2 tsp. pepper
- 1/4 tsp. cinnamon
- 1/4 tsp. coriander
- 2 pounds, lean pork tenderloin
- 1 onion, diced
- 4 garlic cloves, minced
- 1 cup chicken broth
- 1 tbsp. apple cider vinegar
Directions
- Mix all the spices together, then rub the mixture over the pork.
- Place the pork in the slow cooker.
- Cover the pork with the diced onions and minced garlic, then add the chicken broth and apple cider vinegar.
- Cook for 4-6 hours on low, until you can easily shred the pork with a fork.
- For crispy pork, place it under the broiler for 3-5 minutes after removing it from the slow cooker.
- Serve the pulled pork in lettuce wraps – enjoy!
