Eating a breakfast packed with protein helps you feel even more energized and prepares you to take on the day. One of the most important benefits of eating more protein is that it often makes you feel full for longer. This leads to healthier eating all around, which is important for weight loss.

This recipe contains eggs, which are an excellent source of protein. Despite their "bad" reputation, eggs are actually good for you, especially the egg whites. Some studies show eggs may help reduce cholesterol, which is the opposite of what many people believe. Eggs are also a super source of choline, an important nutrient which has been found to be vital for a healthy brain and nervous system. Bacon Wrapped Omelet Bites

 

Yields: 12 Servings

Prep Time: 10 Minutes  Cook Time: 40 Minutes

Per serving - Energy: 115kcal | Carb: 1.15g | Prot: 14.24g | Fat: 5.50g

 

Ingredients

  • 12 thin slices bacon
  • 4 large eggs
  • 2 cups diced chicken, cooked
  • 12 large egg whites
  • 1/2 medium green pepper, chopped
  • 2 cups spinach, chopped
  • 1/2 medium red pepper, chopped

Directions

  • Preheat oven to 350 °F (175 °C).
  • Cook bacon in a pan over medium heat only until it's cooked through, but not crispy. About 5 minutes. (Okay to use olive oil, peanut oil, cooking spray or substitute butter spray when cooking).
  • Spray a muffin tin with non-stick cooking spray and place one piece of bacon in each tin, wrapping it around the outer edges.
  • In a medium bowl, scramble the whole eggs along with the egg whites. Add salt and pepper to taste.
  • Add the chopped red and green peppers, spinach, and diced chicken to the egg mixture.
  • Combine thoroughly and then pour the mixture into each of the muffin tins lined with the bacon. (A soup ladle will transfer the mixture without spilling).
  • Bake until the eggs are fluffy and slightly browned on top, 30 to 35 minutes.
  • Note: Top with diced avocado or mix in different ingredients like mushrooms, sausage and onions for additional flavor choices.
