One Pot Garlicky Shrimp and Broccoli

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for heat)
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Heat the olive oil in a large skillet or pan over medium-high heat. Add the minced garlic and sauté for about 1 minute until it becomes fragrant.

  2. Add the shrimp to the skillet and season with salt, pepper, and red pepper flakes if you like it spicy. Cook the shrimp for about 1-2 minutes per side until they turn pink and opaque. Remove the cooked shrimp from the skillet and set them aside.

  3. In the same skillet, add the chicken or vegetable broth and broccoli florets. Cover the skillet and let the broccoli cook for about 3-4 minutes until it becomes crisp-tender.

  4. Reduce the heat to medium-low, then add the heavy cream and grated Parmesan cheese to the skillet. Stir well to combine all the ingredients. Let the sauce simmer for about 2-3 minutes until it thickens slightly.

  5. Return the cooked shrimp to the skillet and toss them in the creamy garlic sauce along with the broccoli. Cook for an additional 2-3 minutes, allowing the shrimp to heat through.

  6. Taste and adjust the seasoning with more salt, pepper, or red pepper flakes if desired.

  7. Garnish with freshly chopped parsley for a burst of color and freshness.
