Ingredients:

  • 1 pound asparagus, trimmed and cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 medium zucchini, sliced
  • 1 bell pepper (any color), thinly sliced
  • 1 cup snow peas, ends trimmed
  • 3 tablespoons avocado oil or olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce or tamari (for gluten-free option)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Chopped green onions for garnish (optional)

Instructions:

  1. Prepare the Vegetables: Wash and chop the asparagus, broccoli, zucchini, bell pepper, and snow peas into bite-sized pieces, ensuring uniformity for even cooking.

  2. Stir-Fry: Heat avocado oil in a large wok or skillet over medium-high heat. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Add the asparagus, broccoli, zucchini, bell pepper, and snow peas to the pan. Stir-fry the vegetables for 5-7 minutes, or until they are tender-crisp.

  3. Sauce: In a small bowl, whisk together soy sauce (or tamari for a gluten-free option) and sesame oil. Pour the sauce over the vegetables and toss to coat evenly. Continue stir-frying for an additional 2-3 minutes.

  4. Season and Garnish: Season the stir-fry with salt and pepper to taste. If desired, sprinkle sesame seeds and chopped green onions over the dish for added flavor and visual appeal.
