Shirataki noodles are referred to as Miracle Noodles for good reason. They are calorie-free, carb-free, and work great in dishes from all different sorts of cultural cuisines. This recipe takes an easy, classic weeknight dish - stir fry - and turns it into a protein-rich, carb-free meal. The recipe is light and healthy, while at the same time filling and refueling.
Stir-fried Shrimp Shirataki Noodles
Yields 4 servings
Per Servings: 114 calories, 5 g carbs, 6 g fat, and 13 g protein
This is an easy, delicious meal that should only take about 15 minutes to prepare.
Ingredients:
- 16 oz shirataki noodles
- 1 Tbsp cooking oil
- 8 oz shrimp
- 2 cups cabbage shredded
- 1/4 cup hot water
- 1 small radish peeled and shredded
Aromatics:
- 1 stalk green onion separate green and white, thinly sliced
- 3 cloves garlic finely chopped
- 1/2 tsp finely chopped fresh ginger
Seasoning:
Directions:
- Rinse the noodles with water. Boil for two minutes, and then rinse again with water. Set aside.
- Preheat a medium or large pan with cooking oil. Add white part of green onion, garlic, and ginger. Stir fry for about 1 minute. Add shredded cabbage and stir fry for about 2 minutes. Pour in 1/4 cup hot water and cook further to let the cabbage wilt. Add carrots, stir fry for another 30 seconds
- Add shrimp and stir fry until the shrimp turn pink. Add shirtaki noodles. Pour in the seasonings and stir fry to mix everything. Have a taste. Add more soy sauce if needed. Garnish with the green part of sliced green onions. Serve immediately.
