Stuffed Bell Peppers with Cauliflower Rice

Ingredients:

  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb ground turkey or chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cauliflower rice (fresh or frozen)
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/2 cup shredded mozzarella cheese (or cheese of your choice)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Preheat your oven to 375°F (190°C).

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.

  2. Add ground turkey or chicken to the skillet, breaking it up with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.

  3. Stir in cauliflower rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for another 5 minutes, allowing flavors to meld together.

  4. Remove skillet from heat and let the mixture cool slightly. Stir in half of the shredded cheese until well combined.

  5. Place the bell peppers upright in a baking dish. Spoon the turkey or chicken mixture evenly into each pepper until filled.

  6. Sprinkle the remaining shredded cheese on top of each stuffed pepper.

  7. Cover the baking dish with foil and bake in the preheated oven for 30-35 minutes, or until the peppers are tender.

  8. Remove foil and bake for an additional 5 minutes, allowing the cheese to melt and lightly brown.

  9. Remove from the oven and garnish with chopped fresh parsley before serving.
