Grilled Lemon Garlic Shrimp Salad

This salad is proof that healthy doesn’t have to mean boring. Juicy grilled shrimp, a punchy lemon-garlic marinade, and crisp greens come together in a dish that’s fast, fresh, and loaded with flavor. Perfect for a weeknight dinner or a weekend cookout.

For the Shrimp Marinade:

  • 1 lb large shrimp, peeled and deveined

  • 3 tbsp olive oil

  • Juice and zest of 1 lemon

  • 3 garlic cloves, minced

  • 1 tsp honey

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: pinch of red pepper flakes

For the Salad:

  • 4 cups mixed greens (arugula, spinach, or romaine)

  • 1 cup cherry tomatoes, halved

  • 1 avocado, sliced

  • ¼ red onion, thinly sliced

  • Feta cheese or goat cheese (optional)

  • Extra lemon wedges for serving

Quick How-To

1. Marinate the Shrimp
In a bowl, whisk together the olive oil, lemon juice and zest, garlic, honey, salt, pepper, and red pepper flakes. Toss in the shrimp and let them marinate for 15–20 minutes while you prep the salad.

2. Grill
Heat a grill or grill pan over medium-high heat. Skewer the shrimp or place directly on the grill. Cook 2–3 minutes per side, until pink and slightly charred.

3. Build the Salad
Layer your greens, tomatoes, avocado, onion, and cheese. Top with hot-off-the-grill shrimp and a squeeze of lemon.

4. Eat Immediately
This salad is best served fresh. No heavy dressing needed—the marinade doubles as a light, bright flavor booster.
